Coconut Nectar

 

A liquid collected from the coconut flower. It is rich in amino acids and vitamins.  It is the same sap that is made into coconut sugar. It is made by reducing the liquid into a dark viscous syrup.  It is used to sweeten pancakes or mixed with vinegar to make a vinaigrette for salads.   • Process

    The sweet juice or sap drips from drips from the newly formed coconut flower. The farmer has to climb the coconut tree in the morning to collect the sap. The sap is then filtered with coconut cloth. It is boiled at 110 deg C for 30-60 minutes until liquid becomes very sticky. It cooled down at normal temperature. It is then packed into bottles or drums. No chemical substance or additives are used in the process.
